In 2012, we started our annual search to find a Canadian artist to design the packaging for this Limited Edition beer. With many excellent entries, competition was tough but we hope you’ll agree that Tatianna ODonnell’s ‘Forest Spectrum’ makes for an excellent backdrop to this unique Innis & Gunn brew.
A word or 2 about the beer: We brewed this Scotch Ale with an unusual combination of grains (Optic, Crystal and Aromatic Barley Malt, plus Roasted Barley and Wheat) to give it its full malty backbone. Then we put the beer through a longer boil in the copper with our hops to help caramelise the malt flavours. Goldings and Super Styrian hops together add an earthy bitterness which balances out the rich sweetness from the grains.
We matured the beer over Canadian Black Cherrywood which was infused with Bourbon, and then added a touch of Maple Syrup before bottling to give the beer a sweet, toasty twist.
The resulting beer is strong, rich and very full bodied. 330 ml, 8.3% alc./vol.
